Immune boosting chicken stir fry wf,gf,df |
| This is a really good stir fry to start off with. You can cut up all the vegetables freshly yourself, or once in a while for a super speedy stir fry, you can use the ready sliced ones that you can find in supermarkets.

| 1 onion thinly sliced 1 tbsp olive oil 1 garlic clove 1lb (450g) skinless and boneless chicken breasts, cut into thin strips 1 inch cube of ginger thinly sliced Sliced vegetables including slice onions, peppers, pak choi, carrots, beansprouts, mangetout and baby corn or 1 x 300g pack of stir fry vegetables, 1 x 300g pack of beansprouts 1 tbsp tamari soy sauce 1 tbsp runny honey a handful of chopped coriander

| Stir fry the onion, ginger and garlic in the olive oil. Add the chicken and stir fry for a further 3-4 minutes. Add the stir fry vegetables with the honey and soy sauce and stir fry for a further 4-5 minutes. When cooked, toss over some chopped coriander. Serve with brown rice. Cashew nut stir fry: Instead of the chicken, roast some cashew under the grill and toss them in at the end.
