| I was recently given a paella pan and I am now hooked. They are so easy to make and can feed hundreds of hungry teenagers! This recipe is particularly good for the immune system, packed full of antioxidants and essential fatty acids. An added bonus is that the leftovers will keep until the next day.

| 2 tbsps extra virgin olive oil 1 onion chopped finely 2 cloves of garlic, pressed 1 red pepper, deseeded and diced 1 green pepper, deseeded and diced a pinch of turmeric 2 handfuls of calamari rings 2 handfuls of peeled prawns 1 handful of fresh cockles or similar shellfish 1 cup of frozen peas 2 plum tomatoes, skinned and chopped 12oz (375g) long grain brown rice or paella rice 1 1/2 pints of low-salt marigold swiss vegetable bouillon Handful of chopped parsley

| In a paella pan or large flat frying pan, gently cook the onion and garlic and peppers in the olive oil until soft. Add the turmeric and cook for a minute. Add the squid, prawns and cockles and stir for a couple of minutes. Add the tomatoes and rice and cook for two minutes. Add the stock and frozen peas. Allow to bubble very hard for a couple of minutes. Stir well and then allow to simmer gently for 25 minutes until all the stock has been absorbed. Toss over the chopped parsley and serve direct from the pan with a large mixed salad.
