| My mother gave me this recipe, and it really is delicious. It is best made with fresh tiger prawns, but the frozen ones are a good stand by. You can choose whether to include the chilli or leave it out, depending on your family's preference. Chilli's help to shift mucus from the lungs and are therefore very useful when there are chest infections around. It is another recipe that you can make well in advance and then just add the creamed coconut when you heat it to serve it.

| 1lb large frozen cooked tiger prawns 2 tbsp extra virgin olive oil 2 medium onions, chopped 1/2 tsp chilli powder 1/2 tsp turmeric 1 tsp ground coriander 1 tsp raw honey 4 cloves 2 inc cinnamon stick 2 tsp grated ginger 3 bay leaves 4 tomatoes skinned and chopped 2 inch cube of creamed coconut

| Gently sauté the onions in the olive oil. Add the spices and cook for a couple of minutes stirring all the time. Add tomatoes and bring to simmering point. Add the prawns and gently simmer for five minutes and just before serving add the creamed coconut and stir until dissolved. Remember to remove the bay leaves and cloves and cinnamon stick before serving. Serve with brown rice and a mixture of chutneys. This is excellent with an oriental vegetable like pak choi or mustard tops.
