Recipes for ages 13 - 18 feed four adults, unless otherwise stated in the recipe itself.

Daily Dose

Herby omelette wf,df,gf

 


Herbs are a wonderful addition to an omelette. They add colour, flavour, iron and their own therapeutic value. If your teenagers have grown up with herby eggs they will still love them.

 


10 eggs, beaten
a large handful of fresh herbs e.g. parsley, coriander, chives, oregano
a kob of unhydrogenated vegetable margarine (or butter if not dairy free)

 


Add the herbs to the beaten egg and stir in well. Heat a frying pan and add the butter. When melted add the egg mixure and cook until firm. Turn the omelette over if you can, to make sure it is fully cooked. Serve with rice cakes, ryvita or toast and a large salad.
