Recipes for ages 5 - 12 feed 2 adults and 2 children, unless otherwise stated in the recipe itself.

Daily Dose

Chickpea and coconut curry v,vn,wf,df,gf

 


This vegetarian curry is extremely mild. It is a great introduction to the world of immune boosting spices for the younger members of the family.

 


1 tin of chickpeas, (no sugar, no salt)
2 tbsp extra virgin olive oil
2 onions, finely chopped
1/2 tsp turmeric
1 tsp ground coriander
1 tbsp honey
4 cloves
2 inch cinnamon stick
2 tsps grated ginger
3 bay leaves
1 tin of chopped tomatoes
2 inch cube of creamed coconut

 


In a saucepan, gently cook the onions in the olive oil. Add the spices and cook for a couple of minutes, stirring well. Add the tomatoes and honey and chickpeas and simmer gently for five minutes. Remove the cloves, bay leaves and cinnamon stick. Just before serving add the creamed coconut and stir until dissolved. Serve with brown rice and a variety of chutneys and relishes.
