Vegetable stock*

 


Makes about 28 ice cubes
This stock is marvellous to have in the freezer in ice cube portions. It contains thyme which is an immune boosting herb. It will stimulate your baby’s natural resistance and has both antiviral and antibacterial activity. It also contains garlic, which has to be the most important item in the immune boosting larder. Garlic is antibacterial, antiviral and antifungal. It gives added flavour to these very first savoury purees.

 


2 large carrots
1 medium onion
1 small clove of garlic
3 stalks of celery including tops
2 tbsp extra virgin olive oil
1 sprig of fresh thyme
1 bay leaf
1.5 pints of filtered water

 


Peel and slice the carrots. Wash, peel and chop the onion. Peel and press the garlic. Wash and chop the celery. In a saucepan, heat the oil and cook the leek and garlic for a few minutes until soft. Add the carrot and celery, stir and gently cook for five minutes. Add the thyme, bayleaf and water, bring to the boil, cover and simmer for one hour. Remove bay leaf and thyme before liquidizing.
